About the recipe

Buddy uses these spiced ginger biscuits in his epic Rocky road recipe, but you can enjoy them on their own as well. Baked until golden in only 12 minutes, a sweet treat is never far away once you’ve got these in your repertoire.

Ingredients

100g self-raising flour

1 level teaspoon bicarbonate of soda

1½ teaspoons ground ginger

½ teaspoon ground cinnamon

50g golden caster sugar

50g unsalted butter

2 tablespoons golden syrup

Method

  1. Preheat the oven to 170°C/325°F/gas 3 and line two large baking trays with greaseproof paper.
  2. Place the flour, bicarbonate of soda, ginger, cinnamon and sugar in a mixing bowl and mix well. Melt the butter with the syrup in a small pan, then pour into the bowl and mix to a soft dough.
  3. Divide the dough into 16 portions and roll each piece into a ball. Place on the lined trays, leaving a gap between them, then press down to flatten slightly.
  4. Bake for 12 minutes, or until beautifully golden and starting to crack. Leave to cool on the trays for 10 minutes, then transfer to a wire rack to cool completely.

Jamie wholeheartedly believes that cooking is up there as one of the most valuable skills you can teach a child. Getting kids excited about food, where it comes from and how to cook it, gives them a better chance of being healthier and happier in the long run. When cooking with kids, use your common sense to determine what jobs they can help you with, depending on their age and skill level. It’s always good to start small, with jobs such as mixing and measuring, then progress to elements of a recipe, then go on to slightly trickier techniques over time. The more they cook, the better they’ll get. Make sure you supervise them when using heat or sharp utensils like knives and box graters, and teach them about the importance of washing their hands before they start, and after handling raw meat and fish, as well as other basic hygiene rules. Most of all, have fun with it, and encourage them to give things a go.
