Ingredients

1 clove of garlic

1 bunch of fresh tarragon (20g)

1 lemon

1 tablespoon baby capers

2 anchovy fillets in oil, from sustainable sources

1 teaspoon Dijon mustard

500g leftover chicken broth (including any veg you’ve already added)

1 pouch of Jamie Oliver Super Grains

Top Tip

Feel free to make this veggie! Simply leave the anchovies out of the dressing, replacing their oil with 1 tablespoon of olive oil, and swap the chicken broth for a veggie one.

Method

  1. Peel the garlic, pick the tarragon leaves and finely grate the zest of the lemon. Finely chop together on a board with the capers, anchovies, 1 tablespoon of their oil and a small pinch of sea salt, mixing it all together to create a green sauce. Transfer to a bowl, squeeze in the lemon juice, add the mustard, give it a good mix and set aside.
  2. Place the leftover broth in a small pan on a medium heat and bring to a boil. Divide the grains between 2 bowls – there’s no need to heat them.
  3. Once the broth is piping hot, ladle it over the grains and drizzle over the green dressing. Yum!
