Easy Air Fryer

Ingredients

4 small eating apples

25g mixed dried fruit

25g stem ginger balls in syrup

25g flaked almonds

25g demerara sugar

1 pinch of ground cinnamon

50g soft unsalted butter

4 small slices of fruit bread or brioche

1 x 400g tin of custard

Method

  1. Keeping them whole, use an apple corer or a small sharp knife to remove and discard the core of each apple, then use the knife to carefully score around the middle a couple of times, going almost as deep as the core.
  2. Finely chop the dried fruit and ginger, scrape into a bowl, add the almonds, sugar, cinnamon and butter, then use your clean hands to scrunch and mix it all together really well. Poke into the apple cores, reserving the excess.
  3. Evenly space the slices of fruit bread in the air-fryer drawer and sit one filled apple on each. Cook for 15 minutes at 160°C.
  4. Spoon any extra filling on top of the apples and cook for another 10 minutes at 160°C, or until soft and golden. Serve with hot or cold custard, and enjoy!

All air fryers are different, so results may vary – please follow the recipe instructions for guidance, and use your instincts to adjust times accordingly if your machine runs a little hotter or colder than average.
